  • We are proud that, once again, our team at The Sustainable Restaurant Association will be judging the Sustainable Street Food Award at the The British Street Food Awards. This Award recognises a street food vendor that is going above and beyond to ensure that their food not only tastes good, but does good too.   The entry questionnaire has been designed to provide an overview of sustainability practices, assessing a business across three pillars: Sourcing, Society and Environment.   • 🌍🍜 We had an inspiring chat with Hilary Ansell MCMI from Marugame Udon Europe, who leads sustainability efforts across their expanding UK network! Since day one, Marugame Udon UK has been dedicated to building a responsible, future-focused business. Listen into some of the key initiatives they're particularly proud of, from monitoring and cutting energy use to make impactful reductions and partnering with Too Good To Go to save over 350 meals from going to waste each week. We worked with Marugame Udon last year to support them in completing the Food Made Good Standard, where they earned two stars for their commitments. Our collaboration has helped the team fully understand the holistic aspect of #sustainability, ensuring they’re focusing on all the right areas for the greatest impact.   • Huge congratulations to Olive Catering Services Limited for achieving three stars in our Food Made Good Standard! We partnered with Olive Catering on a Facilitated Standard. Our Sustainability Consultant, Laurence Hamdan, kicked things off with a Materiality Analysis to pinpoint the most significant ESG issues impacting the business and its stakeholders, gathering insights both internally and externally through interviews and surveys. Laurence then completed a large portion of the Food Made Good Standard from the collected information, streamlining the submission process. Following this, benchmarking showed Olive Catering’s performance against similar businesses, and a roadmap was created to outline next steps and improvements.   Here’s why they stood out:   🌍 They have taken steps to address their environmental impact, such as conducting a carbon footprint analysis, removing single-use items like cutlery and setting a reduction target for their organic waste.   🌍 They offer freshly prepared food daily across their sites, as well as seasonal ingredients across changing menus.   🌍 They ensure transparent and equitable treatment of team members through clear policies, handbooks and tonnes of training opportunities across a variety of topics, including sustainability.   Keep up the amazing work, Olive Catering!   • Last week, we explored why provenance is a particularly powerful strategy for hotel brands.   • Loved catching up with Japanese Chef Yudai Kitaku of SELVAGGIO at Riverside Lodge in Matsuno, Ehime Prefecture! Chef Kitaku shared their passion for fresh, locally sourced ingredients and how they celebrate the unique flavours and heritage foods of this deeply forested valley. "Without producers, restaurants would not be possible." SELVAGGIO's dedication to local food and strong relationships with farmers earned them the Food Made Good Sourcing award at the 2023 Food Made Good Japan Awards!  In 2024, they achieved an exceptional three-star rating by completing the Food Made Good Standard. “By signing up to the Food Made Good Standard, we wanted to learn about the global food issues that are critical for restaurants and how to put sustainability work into practice. While working on the Standard, we learned so much about sustainable food, global standards, and how we can take action.” 🌍🍽️ Thank you to our team in Japan for building our network of restaurants committed to sustainability.
