GET INSPIRED Back at the European Food Service Summit, this time in Amsterdam. 10 years ago a speaker said the biggest threat to the food service sector was aggregators. They’ve since become an integrated cost after much adjustment. Today, the staggering growth of ready-to-eat from food retailers is denting restaurants sales. Convenience, lower prices, speed, are key drivers to new consumer behaviour. Add to this a post covid living shift and younger generations who don’t see the point to sit down for lunch in a restaurant unless with friends in an experiential context. So, should restaurants start thinking of a small, highly focused ready-to-eat food retail offer aligned with their menus? If some coffee shops do it, why can’t restaurants? Anyhow, as long as people are famished for reciprocal intimacy, our sector is safe. Other subjects were covered such as integrated AI in digital marketing and design or immersive (again digital) restaurants, which will become the new norm. Some of the speakers, namely Claus Meyer and Jimmy Nelson, were mesmerising! The European Food Service Summit is still THE perfect place to think and meet great people. MASTER OF OPENINGS Those who know yann Chevris are well aware of his incredible talent to open restaurants on time and on budget whist delivering the expected DNA, quality and results. Too many to count! Now back in Dubai after 9 great years in KSA, Yann is ready for the next phase in his career, consulting and investing… Yann is like a fine burgundy, he gets better with age. After having known him for over 35 years, it’s always a pleasure to catch up. On a side note, lunch at Avli was most enjoyable.
