2 lbs (900g) boneless, skinless chicken thighs or breasts
3 cloves garlic, minced
1/4 cup plain Greek yogurt
2 tbsp olive oil
1 tbsp ground cumin
1 tbsp ground paprika
1 tsp ground turmeric
1 tsp ground cinnamon
1/2 tsp ground cardamom
1/2 tsp ground coriander
1/2 tsp ground cayenne (optional for extra spice)
1 tsp salt
1/2 tsp black pepper
Juice of 1 lemon
Pita bread or flatbread
Sliced cucumbers
Sliced tomatoes
Shredded lettuce
Pickles
Sliced red onions
Tahini sauce, garlic sauce, or yogurt sauce
In a large bowl, mix together garlic, yogurt, olive oil, spices, salt, pepper, and lemon juice.
Add the chicken, making sure each piece is well-coated. Cover and let marinate in the fridge for at least 1 hour, or up to overnight for the best flavor.
Bake for 25–30 minutes, turning halfway through
Once done, let the chicken rest for 5 minutes, then slice thinly.
