Our current script to build and run BaaS locally relies on Core's build infrastructure. This prevents us from building and running arbitrary BaaS versions and bump to newer version according to BaaS requirements (e.g. https://github.com/realm/realm-kotlin/pull/1559/files#diff-4b0401ee7b05302307b9fe385a792e3f5b8c7053c56df397ebf43c4eeeb5bcfcR10)

There are initiatives to provide images for this from BaaS side, so I guess that is the way to go. But in the meantime at least core updated their script to support latest BaaS version in realm/realm-core#7042.
