Grilled Pineapple Pear Salsa
============================

__Ingredients__
* 1/2 ripe pineapple, trimmed and sliced
* 1 large medium-firm pear sliced into 1/4 inch slices
* 1 large red bell pepper, seeded and quartered
* 1/2 small red onion, peeled and cut in half (so you have 2 quarters of a whole onion)
* 1 jalapeno, diced
* 1/2 cup loosely packed cilantro, finely chopped
* 1 tablespoon lime juice
* 1/8 teaspoon ground ginger
* 1/8 teaspoon ground cumin
* salt and pepper to taste

__Instructions__
* Sautee red onions, pineapple, red bell peppers, pears, and jalapeno in olive oil on high heat. Do not move vegetables and pineapples around until they're slightly charred and caramelized.
* Once the above ingredients are caramelized and charred, take them off the heat and place them in medium bowl.
* Mix in cilantro, lime juice, ground ginger, ground cumin, and salt and pepper.

Can be eaten immediately but it is best served chilled.

Pineapple Lime Crema
====================

__Ingredients__
* 1 5.3 ounce pineapple yogurt
* 2 tablespoons mayonnaise
* 1/2 tablespoon lime juice

__Instructions__
* Whisk ingredients together in small bowl.
* Place in refrigerator until ready to use.

Teriyaki Chicken Tacos
======================

These Teriyaki Chicken Tacos are savory, sweet, spicy, tangy, and everything in between to become your new favorite tacos!

__Ingredients__
* 1 bottle Teriyaki marinade or sauce
* 1/2 pounds [basic shredded chicken](../base_layers/basic_shredded_chicken.md)
* 4-6 taco size flour tortillas
* 2 cups shredded Montery Jack cheese
* 1 1/4 cups cooked rice
* [Grilled pineapple pear salsa](../condiments/grilled_pineapple_pear_salsa.md)
* [Pineapple lime crema](../condiments/pineapple_lime_crema.md)

__Instructions__
* Place the [basic shredded chicken](../base_layers/basic_shredded_chicken.md) in a medium bowl, pour 1/2 bottle of Teriyaki sauce into the bowl and mix well.
* Heat up tortillas in a medium pan with a little bit of butter on medium-low heat. While the tortilla is heating up, place a little bit of rice on the tortilla, then top with some cheese so the cheese will melt slightly.
* Take the tortilla/rice/cheese combo out of the pan and onto a plate.
* Top with Teriyaki chicken, followed by grilled pineapple pear salsa, finally drizzle with pineapple lime crema.
