Apollo does not watch Percy Jackson.
He very pointedly does not observe Poseidon's Favored, or guide his rays to paint his skin in deeper hues when he's under Apollo’s sun. Apollo does not soak up the stories his children tell of Percy when he visits them at camp, nor does he steal glances of him faster than mortal eyes can perceive when they happen to visit at the same time. Apollo does not avoid Dionysus’ knowing glances or Chiron's weary sighs.
Apollo is fine.

“Annabeth, what year is it?” Chiron asked at long last.
Percy’s head snapped around to stare at him so quickly that she was pretty sure it must have hurt him. His eyes were wide and a little fearful, like he wanted to believe Chiron would take back his question and laugh it all off, say there was nothing wrong and everything was just fine. But the centaur just kept on looking at Annabeth expectantly.
She fidgeted uneasily under his intense gaze, suddenly feeling self-conscious. The year? He had to be joking, right? “2005.”
They both stared at her like she was crazy.
Percy’s head shook from side to side slowly. “No… It’s 2008.”

Annabeth and Percy get attacked and Annabeth wakes up without her memories of the last four years, which would have been fine if she didn't have to wake up to a world where people seemed to expect her to get along with a son of Poseidon of all people.

When Odysseus passed on, he expected to reawaken in the Underworld. Much to his surprise, he did not, in fact, awaken in the Underworld. Instead he’s in a strange looking house with an even stranger companion, who is also a spirit because that’s happening apparently. And there’s also the struggling, single mother, who can’t see nor hear them, and her son, who can.
Well, they don’t have anything better to do, might as well help her out!
Or, the spirits of Odysseus and Perseus, their souls somehow bound to him, co-parent a young Percy Jackson, unbeknownst to Sally. Shenanigans ensue.

“Percy?” the centaur asked slowly, uncertainly.
Percy’s eyes stung a little. He finally found someone who seemed to know him!
“No way that’s Prissy!” the girl who’s thrown the spear at him objected loudly. “Come on, he’s taller. And definitely a little older.”
“How old are you, child?” the centaur asked.
Percy raised an eyebrow at him. “Uh, I’m not entirely sure when my birthday is exactly, but… sixteen, I think. Why?”
“Because I believe you really are who you claim to be. But our Percy Jackson has not yet turned fifteen and he is currently, well, lost.”

An amnesiac Percy finds himself in the past, blinking at a bunch of kids with similar orange shirts to his own after being snatched from his confrontation with the gorgons. Suffice to say, he's not really sure what's going on, or how to take in the fact that apparently in this time period he's presumed dead after blowing up a volcano.
Oh, well, at least the one face he recognizes is actually there.
(Or, Percy from the beginning of Son of Neptune goes back in time to Battle of the Labyrinth and kind of rolls with everything that's happening around him)
