You don't need to start a new section or add a new {{help me}} template when you reply to someone; usually editors keep an eye on discussions they have recently contributed to (that's one of the uses of the watchlist. So you can simply edit a section and put your answer under the comment you're replying to (intenting it makes it easier for others to tell who said what, and you should sign your talk page comments with four tildes (~~~~). Yes, you can blank almost anything from your own user talk page (for the exceptions, see WP:BLANKING). They are still there in the history. Generally, when a talk page gets too long, it's better to archive older sections, and there are "bots" that will do that for you - see User:Lowercase sigmabot III/Archive HowTo.
