Job Description

Basic Function: BASIC FUNCTION:

Under the supervision of the Manager; is responsible for the entire kitchen preparation of menu items, special catering events, cafeteria, and kiosk location.

Provides Work Or Lead Direction To:

Any Food Service worker(s), Short-Term employee(s) and/or Work Study student(s).

Education: EDUCATION:

Graduation from high school or GED equivalent is required. Additional food management and nutrition courses are desired.

Experience: EXPERIENCE:

Three years of directly related experience in large quantity food preparation is required.

Knowledge Of:

ServSafe and Hazard Analysis Critical Control Point (HACCP); institutional cooking and preparation; handling of foods under strict sanitary conditions; principles and practices of supervision.

Ability To:

Operate mechanical equipment used in the kitchen; keep accurate records; follow oral and written instructions; maintain cooperative relationships with those contacted in the course of work.

Licenses/Certifications: LICENSES/CERTIFICATIONS:

Must successfully pass the National Restaurant Association Educational Foundation for the ServSafe® Food Protection Manager Certification Examination during the first year of employment; must possess a valid California driver's license, and have (and maintain) an insurable driving record acceptable to the District's insurance carrier, are required.

Duties and Responsibilities: REPRESENTATIVE DUTIES:

  • Confers daily with Manager, Food Services.
  • Operates cash register, performs operational check out; determines product supply and replenishment requirements; performs money counts and balance receipts and orders supplies.
  • Operates District vehicle as assigned.
  • Prepares specifically assigned menu items, i.e., salads, sandwiches, soups, sauces, meats, vegetables, baked goods, etc., using prescribed menu, production sheets, established procedures, recipes, and time schedules.
  • Maintains daily records of food and supplies used.
  • Assists in preparation, distribution, and service feeding programs and catered events; and maintains records of these activities.
  • Takes physical inventory of food and supplies.
  • Maintains the total production of all meals produced from the cafeteria.
  • Assists in assigning staff to prepare meals; helps in determining employee schedules.
  • Operates a variety of kitchen equipment including grill, mixer, fryer, ovens, refrigerators, freezers, and dishwasher.
  • Assists in developing and evaluating recipes with the Manager, Food Services.
  • Maintains an up-to-date, complete file of all recipes.
  • Checks catering schedules daily; prepares food for catering; sets up and delivers catering on and off site; cleans up after functions; sets up catering for following day.
  • Stocks and stores food items; maintains inventory of products and equipment; checks deliveries.
  • Maintains orderliness of kitchen and sanitation of all equipment.
  • Ensures proper presentation and garnishing of foods.
  • Notifies the Manager, Food Services about equipment problems and/or needs.
  • Fills in for absentee personnel as required.
  • Cooks and serves on food line as assigned.
  • Participates in District-provided in-service training programs.
  • Maintains a friendly, supportive atmosphere for students, staff, faculty, and the public.
  • Performs other duties, related to the position, as assigned.

Conditions of Employment: CONDITIONS OF EMPLOYMENT:

SALARY: Salary grades consist of nine steps. A new employee is normally placed on Step 1 of the grade. Changes in step placement take place on the first day of the first month following the anniversary date of attaining permanent classified employee status until the maximum of the grade is reached.

HOLIDAYS: There are 13 holidays observed each year. A pro-rata reduction will be made for employees working less than full-time and less than twelve months.

VACATION: Employees are granted 12 days of vacation per year through the first five years of service to the District; 15 days after completion of five continuous years of service to the District; 20 days after completion of ten continuous years of service to the District; and 22 days after completion of 15 continuous years of service to the District. This computation is based on full-time, twelve-month employment. A pro-rata reduction will be made for employees working less than full-time and less than twelve months.

SICK LEAVE: One day of sick leave for each month of service is granted. This is based on full-time, twelve-month

employment. A pro-rata reduction will be made for employees working less than full-time and less than twelve months. There is no limit to the number of days of sick leave which may be accrued.

FRINGE BENEFITS: The District provides a health and welfare benefit package for employees and legal qualifying dependents. Those employees working less than full-time and less than twelve months will receive a pro-rata share of the benefit package. The dollar value of the package is a subject of negotiation between the District and the Bargaining Unit.

The work location and assignment within a job classification is determined by the District and may be subject to change.
